The Need

Many biological studies currently rely on the extraction and fractionation of high purity pigments known as anthocyanins from fruits and vegetables, due to their ability to provide color and potential for increased health benefits. As a result of these benefits, anthocyanins have many applications within the food industry. However, existing methods result in plant constituents inevitably being mixed into the anthocyanin fraction, generating impurities. These impurities result in interference with scientific studies of anthocyanin bioactivity and accelerate the degradation of anthocyanins in commercial food applications.

The Technology

Researchers at the Ohio State University have developed a novel technique to fractionate high purity anthocyanins from fruits and vegetables. Developed to isolate anthocyanin-mixtures using mixed-mode resins, the technology could lead to reduced costs for scientists, and expands the number of plant materials that can be utilized. As a result the technology introduces a unique value proposition, by combining cost-effectiveness with flexibility.
